Sustaining Summer: Easy Summer Dinner
This time of year, the days are long & rather hot. In order to extend the time spent at the pool & less time in the kitchen, a simple & sustainable summertime dinner is a welcomed idea.
Taking a page out of American Chef, Restauranteur, author, & activist Alice Waters, I love {& advocate} to eat seasonally.
Luckily, summertime is prime time to eat local fruits & vegetables. Here is my go-to quick sustainable, seasonal, & simple summer dinner idea.

Fresh garden tomatoes, corn, & cottage cheese.
The combination is oddly satisfying as it is simple. Any of these ingredients {corn, tomatoes, & cottage cheese} & be simple dressing such with cracked black pepper & fresh sea salt or dressed up garnishes such as fresh pineapple slice on top of your cottage cheese and fresh basil with balsamic dressing drizzled over your tomatoes.
This summer meal idea is something you'll want to eat al fresco, where the humid air hums around your lips as you lick drips of butter {leftover from the corn} from the corners of your mouth.
