his year, I set a small but meaningful goal for myself: to bake one thing from scratch each month. Nothing too fancy, just intentional — slowing down, learning, and enjoying the process. For January, I kicked things off with a classic peach crisp, made with pantry staples and canned peaches.
There’s something really comforting about starting the year with a simple, nostalgic dessert. The peaches were warm and jammy, the topping buttery and crisp, and it felt like the perfect reminder that “from scratch” doesn’t have to mean complicated — just thoughtful. One month down, many more bakes to go.

Simple Peach Crisp Recipe (with canned peaches)
Ingredients
Filling
1 cans sliced peaches, drained
¼ cup granulated sugar
1 tbsp cornstarch
1 tsp vanilla extract
½ tsp cinnamon
Topping
¾ cup old-fashioned oats
½ cup all-purpose flour
½ cup brown sugar
½ tsp cinnamon
Pinch of salt
6 tbsp cold butter, cubed
Instructions
Preheat oven to 350°F.
In a bowl, mix peaches, sugar, cornstarch, vanilla, and cinnamon. Pour into a greased baking dish.
In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Cut in butter until crumbly.
Sprinkle topping evenly over peaches.
Bake for 35–40 minutes, until bubbly and golden.
Let cool slightly and serve warm — extra good with vanilla ice cream.
