Scottish Pancakes Recipe

Are you looking for something quick, easy, light in texture {& calories}, but still yummy to eat alongside your morning coffee & breakfast? Yeah? Good! I have just the thing--Scottish Pancakes.



Unlike your typical pancake, these are a smaller variety & can be stored in an air-tight container & eaten throughout the week. Typically, my mom & I make these at Christmastime {we did this year} & have them throughout the week with our breakfast.

They're really good either plain {how I typically eat them} or with jam/jelly--you really don't need syrup with these.

So here's the recipe--we heat a griddle to 350 & ladle a small {the key is small--they're petite pancakes} of batter on the hot griddle--flip 1/2 through baking as you would making a normal pancake. The first two are usually a bit of a miss-match, but after that, they should form pretty round & yes, small! They're kind of cute 😁

Scottish Pancakes 💕

1 tsp butter
3/4 cup sugar
1 egg
3/4 cup milk {I use skim}
1 3/4 cup flour
2 tsp Baking Powder
Cinnamon {optional}

Whisk-Mix together in large batter bowl & go to your griddle. Typically, they take 2-4 mins to cook evenly once hitting the hot surface. Place on a cooling rack before placing inside a container.
